Stir-Fried Salmon with Crispy Leeks

Ingredients:
450g Dining Solutions Direct Salmon
1 1/2tbsp sweet soy sauce
1 1/2 tbsp tomato ketchup
1 tsp rice wine vinegar
1 tbsp demerara sugar
1 clove garlic
4 tbsp corn oil
finely chopped red chillies, to garnish
Preparation Method:
- Using a sharp knife, cut the Dining Solutions Direct Salmon into slices and place in a shallow, non-metallic dish.
- Mix together the garlic, sugar, rice wine vinegar, tomato ketchup and soy sauce.
- Pour the mixture over the Salmon, toss well and leave to marinate for about thirty minutes.
- Whilst the Salmon is marinating heat three tablespoons of the corn oil in a large pre-heated wok.
- Add the leeks to the wok and stir-fry over a medium high heat for ten minutes.
- Using a slotted spoon, carefully remove the leeks from the wok and transfer to serving plates, warm the serving plates beforehand.
- Add the remaining oil to the wok along with the Salmon and the marinade and cook for two minutes.
- Spoon over the leeks, garnish and serve immediately.
