Stir-Fried Salmon with Crispy Leeks

Servings: 4

Ingredients:

450g Dining Solutions Direct Salmon
1 1/2tbsp sweet soy sauce
1 1/2 tbsp tomato ketchup
1 tsp rice wine vinegar
1 tbsp demerara sugar
1 clove garlic
4 tbsp corn oil
finely chopped red chillies, to garnish


Preparation Method:
  1. Using a sharp knife, cut the Dining Solutions Direct Salmon into slices and place in a shallow, non-metallic dish.
  2. Mix together the garlic, sugar, rice wine vinegar, tomato ketchup and soy sauce.
  3. Pour the mixture over the Salmon, toss well and leave to marinate for about thirty minutes.
  4. Whilst the Salmon is marinating heat three tablespoons of the corn oil in a large pre-heated wok.
  5. Add the leeks to the wok and stir-fry over a medium high heat for ten minutes.
  6. Using a slotted spoon, carefully remove the leeks from the wok and transfer to serving plates, warm the serving plates beforehand.
  7. Add the remaining oil to the wok along with the Salmon and the marinade and cook for two minutes.
  8. Spoon over the leeks, garnish and serve immediately.
