Roasted Monkfish

Ingredients:

3lb Dining Solutions Direct Monkfish
1 Clove garlic, cut into slivers
Freshly grounded black pepper
Olive Oil
Chopped parsley and lemon wedges to garnish
Fresh tomato and basil to serve

Preparation Method:

  1. Pre-heat the oven to 220c, gas mark 7.
  2. Wash the fish, pat dry with kitchen paper.
  3. Make incisions in the fish and push in the slivers of garlic.
  4. Season the fish with freshly ground black pepper and brush with olive oil.
  5. Place the fish in a lightly oiled roasting tin and roast for 20 to 30 minutes, or until cooked.
  6. Garnished with chopped parsley and lemon wedges.
  7. Serve with your choice of sauce separately, we suggest fresh tomato and basil sauce - please see separate recipe.
