Roasted Monkfish
Ingredients:
3lb Dining Solutions Direct Monkfish
1 Clove garlic, cut into slivers
Freshly grounded black pepper
Olive Oil
Chopped parsley and lemon wedges to garnish
Fresh tomato and basil to serve
Preparation Method:
- Pre-heat the oven to 220c, gas mark 7.
- Wash the fish, pat dry with kitchen paper.
- Make incisions in the fish and push in the slivers of garlic.
- Season the fish with freshly ground black pepper and brush with olive oil.
- Place the fish in a lightly oiled roasting tin and roast for 20 to 30 minutes, or until cooked.
- Garnished with chopped parsley and lemon wedges.
- Serve with your choice of sauce separately, we suggest fresh tomato and basil sauce - please see separate recipe.
