Minted Lamb - Casserole

Ingredients:

4 Dining Solutions Lamb Chump Chops
freshly ground pepper
25g (1oz) lard
1 onion, skinned and chopped
396g (14oz) can chopped tomatoes
pinch of garlic salt
2.5ml (˝tsp) salt
5ml (1tsp) sugar
1 bay leaf
60g Cheddar cheese, grated
60g fresh breadcrumbs
 
Preparation Method:

  1. Preheat oven to 170° C.
  2. Sprinkle the Dining Solutions Lamb Chump Chops with pepper on both sides.
  3. Heat the lard in a pan, brown the chops on both sides and use absorbent kitchen paper to remove most of the fat.
  4. Fry the onion in the remaining fat in the pan for roughly 3mins.
  5. Remove the onion using a slotted spoon and place in an ovenproof casserole dish along with the chops.
  6. Mix the tomatoes with their juices, the seasonings, sugar and herbs.
  7. Pour this over the meat. Cover the casserole dish and cook in the oven for 1hr.
  8. Remove the bay leaf, combine the cheese and breadcrumbs and sprinkle over the dish.
  9. Bake in the oven, uncovered, for another 30mins, until it is golden.
