Haddock - Potato Pie   

"A modern version of the classic comfort dish''

Ingredients:

1600g potatoes, peeled and and cut into ½inch dice
680g Dining Solutions Haddock Fillets
300ml milk
1 bunch green onions, minced
230g crême fraiche
salt and pepper to taste
90g Emmental cheese, finely grated
 
Preparation Method:

  1. Preheat the oven to 425° F.
  2. Bring the potatoes to the boil in a large pot of salted water.
  3. Cook for about 15mins, drain, and place in a large bowl.
  4. Meanwhile, place the Dining Solutions Haddock Fillets in a large saucepan over a medium heat. Pour the milk over the fish and sprinkle with green onions.
  5. Cover and bring to the boil. Reduce to a low heat and simmer until the fish flakes easily with a fork.
  6. Transfer the haddock to a plate and remove the bones and skin.
  7. Pour the milk mixture over the diced potatoes and beat until smooth. Blend in the crême fraiche and season with salt and pepper.
  8. Gently fold the haddock into the mixture along with half of the cheese.
  9. Spoon the mixture into a large shallow baking dish, sprinkle the remaining cheese over the top and bake in the pre-heated oven until the surface has turned golden brown.
