Duck   

"Delectable – roast duck with a cherry sauce''

Ingredients:

4 Dining Solutions Duck Breasts
sea salt and freshly ground black pepper
olive oil
 
For the cherry sauce:

1 shallot, finely chopped
3oz cherry jam
1 tbsp red wine
1 tbsp raspberry vinegar
1 orange, juice only
 
Preparation Method:

  1. Defrost the Dining Solutions Duck Breast and score the skin a couple times with a sharp knife.
  2. Season well, heat a frying pan with a little olive oil, when hot sear the duck, skin side down.
  3. When they are golden brown remove from the heat and place in a baking dish.
  4. Cook in a hot oven for 4mins (rare), 7mins (medium), 10mins (well done).
  5. Once the duck is cooked remove from the oven to rest.
  6. Whilst the duck is cooking make the cherry sauce. Sauté the shallot over a gentle heat until it is transparent. Now add the wine, jam and raspberry vinegar. Let the mixture bubble gently until it reduces to syrup. Remove from the heat and stir in the orange juice.
  7. Serve immediately with the duck.
