Fish Bake   

"Carrots, green pepper, stuffing, white fish, baked until golden – a perfect warmer on a Winters evening''

Ingredients:

235ml water
60g butter or margarine
120g carrots, sliced
1 small green pepper (chopped)
230g herb-seasoned stuffing
680g Dining Solutions White Fish (cod, haddock or halibut)
16ml lemon juice
4g chopped fresh parsley
 
Preparation Method:

  1. Mix the water, 2tbsp of butter, carrots and the pepper in a saucepan.
  2. Heat to a boil, add the stuffing and mix lightly.
  3. Spoon the stuffing across the centre of a 3-quart shallow baking dish and arrange your chosen Dining Solutions White Fish on each side of the stuffing.
  4. Melt the remaining butter and mix it with the lemon juice and parsley.
  5. Spoon over the fish and bake in the oven at 400° F for 15mins.
