Venison Steaks with Cranberry Sauce

Ingredients:

150ml red wine
2tbsp port
6 juniper berries, crushed
2tbsp vegetable oil
freshly ground black pepper
6 Dining Solutions Venison Steaks
3tbsp fresh or frozen cranberries
150ml half fat cream
 
Preparation Method:

  1. Mix together the wine, port, juniper berries and oil for the marinade. Season with black pepper.
  2. Pour the marinade over the Dining Solutions Venison Steaks and leave overnight in the fridge.
  3. Remove and pat dry, reserve the marinade.
  4. Melt the butter in a large frying pan until foaming and quickly seal the steaks until browned on both sides.
  5. Lower the heat slightly and cook for a further 3mins on each side, then remove and keep warm.
  6. Add the remaining marinade and cranberries to the pan and simmer rapidly until the cranberries have softened, sieve them.
  7. Return to the pan, season, add the cream and heat gently without boiling.
  8. Serve the marinade with the steaks and enjoy!
