Pork Tenderloins with Grilled Mushrooms

Ingredients:

500g Dining Solutions Pork Tenderloins
4 slices streaky bacon, rind removed
freshly ground black pepper
salt
olive oil
300g button mushrooms, stalks removed
watercress sprigs to garnish
 
Preparation Method:

  1. Cut the Dining Solutions Pork Tenderloins into 4 pieces, stand each piece on end and flatten with your hand until it is approx 5cm wide and 25mm thick.
  2. Wrap a slice of bacon around each piece and tie with some fine string.
  3. Season with the black pepper and allow to come to room temperature.
  4. Heat the grill and add more seasoning to the pieces on both sides with salt, black pepper and then brush with olive oil.
  5. Brush the grill grid with olive oil and place the pieces on the grill (make sure the grill is about 3 inches away from the heat) for 10mins, turning the pieces after 7mins and brushing again with olive oil.
  6. After 10mins add the mushrooms to the grill, brush them with olive oil and leave them on the grill for 5mins brushing again with olive oil occasionally.
  7. Remove the string from the tenderloins, be careful to leave the bacon in place around them. 
  8. Serve immediately with the mushrooms and watercress as a garnish.
