New Zealand Monkfish

Ingredients:

60g butter
3 cloves garlic, minced
1 large tomato
224g fresh mushrooms, sliced
55ml dry white wine
4g fresh parsley, chopped
salt and pepper to taste
Cajun seasoning to taste
60g all purpose flour
680g Dining Solutions New Zealand Monkfish, chopped roughly
30ml olive oil
 
Preparation Method:

  1. In a resealable plastic bag mix the salt, pepper, Cajun seasoning and flour.
  2. Place the monkfish in the bag, seal and shake lightly to coat.
  3. Heat the oil and melt the butter in a skillet over a medium heat.
  4. Place the Dining Solutions New Zealand Monkfish fillets in the skillet and cook for about 3mins.
  5. Mix in the garlic, tomato, mushrooms and continue cooking for 3 minutes.
  6. Mix in the wine and parsley.
  7. Continue to cook for 2mins, stirring occasionally.
  8. Serve over rice and pasta and enjoy!
