Crunchy Fish Steaks

Ingredients:

15g butter

1 small onion, peeled and finely chopped

150g fresh breadcrumbs

2¼ tbsp parsley, freshly chopped

60g/2oz grated Cheddar cheese

pinch black pepper

4 Dining Solutions Cod or Haddock Fillets

3 tbsp tomato relish or tomato ketchup

lemon wedges to garnish

 

Preparation Method:

1. Preheat the oven to 190° C/375° F/Gas 5.
2. Melt the butter in a saucepan, add the onion and cook gently.
3. When the onions are soft, remove from the heat.
4. Stir in the breadcrumbs, parsley, cheese and seasoning.
5. Arrange the Dining Solutions fish steaks in a shallow oven-proof dish and spread the relish and the breadcrumbs over the top.
6. Bake in the oven for 20–30mins.
7. Serve garnished with lemon wedges.
