Barbequed Red Snapper

Ingredients:

2 tbsp butter
5 tbsp fresh breadcrumbs
1 tbsp butter
1 spring onion, chopped
1 stalk celery, diced
1 clove garlic, minced
110g (4oz) cooked prawns
110g (4oz) cooked crab meat
1˝ tbsp fresh parsley (chopped)
1 pinch salt
1 pinch freshly ground black pepper
6 (100g) Dining Solutions Red Snapper
 
Preparation Method:

  1. Pre-heat the barbeque charcoals to a high heat.
  2. Make the stuffing by melting 2 tbsp of butter in a frying pan.
  3. Add the breadcrumbs.
  4. Sauté and stir the mixture over medium high heat until the breadcrumbs are brown.
  5. Remove the breadcrumbs to a mixing bowl.
  6. Melt 1 tbsp of butter in the frying pan and sauté the spring onion.
  7. Stir in the prawns, crab, salt, pepper and toss gently.
  8. Cut some aluminum foil to form a double-thickness large rectangle.
  9. Lay the Dining Solutions fish fillets on the foil and mound the stuffing on top of the fillets.
  10. Curl up the edges of the foil to form a tray.
  11. Test the barbeque for medium heat and arrange the pre-heated charcoals to either end placing the fish in foil in the centre of the cooking grate.
  12. Keep covered and cook for 20–25 minutes.
